Holiday Eats with Ice Lord of Ghetto Gastro

The gentlemen of Ghetto Gastro just wrapped their “Featherbed Lane” pop-up bodega, a week full of free lunch, guest DJs, and of course, fine dining. Don’t fret though, Malcolm aka Ice Lord of the culinary quartet got into the holiday vibe and decided to share one of his go-to recipes, a delicious Plantain Banana Bread. Bodega Inspired Plantain Banana Bread

4 ripe or black bananas
4 black plantains
2.5 cups brown sugar
5.5oz brown butter
2 eggs
3 cups All Purpose Flour
1 tablespoon Baking Soda
2 teaspoons Salt

Honey Cream Cheese Glaze

8 ounces cream cheese
1/2 cup orange juice
1/4 cup honey
1 teaspoon salt
Zest from 1 lemon

Brown Butter

1 pound butter

Method for the Brown Butter

Cube the butter to a medium size. In a pot, add the cubed butter and cook on low heat until all the butter is melted. Once melted increase the heat to a boil. Whisk lightly and occasionally. When the butter starts to foam, stop whisking and lower the heat down to a simmer. You should start to smell aromatic flavors of nutty-ness…. Swerve. At this point you can choose to turn the heat off and let the residual heat carry over to a nice golden brown butter or you can choose to go darker. But not too dark, or it will burn. Scale what you need for this recipe and reserve the rest to spread on toast or use in other baked goods!

Method for the bread

Sift the flour and baking soda. Preheat oven at 350F. Using a kitchen aide fitted with the paddle attachment, on a gentle speed, beat the bananas, plantains and brown sugar together for about 5 minutes. Slowly stream in the melted brown butter, then the eggs. Beat for 2 minutes. Lower the speed and add in the dry sifted ingredients. Finish with salt.

Pour the batter into a load tin and bake for 25- 30 minutes or when inserted with a tooth pick, so that it comes out clean.

For the glaze

Boil orange juice with lemon zest. Meanwhile, lightly warm the cream cheese in a microwave to soften slightly. In a bowl, whisk the softened cream cheese with the honey and pour the orange juice over top gradually. Pour the mixture over the bread to glaze.
